Since I’m challenging myself+my husband to make new recipes out of our new cookbooks throughout the year (at least one from each book per month), I decided to do mini-review posts of the recipes we make on the blog. I will not be posting the recipe (you can get it yourself in whichever book it comes from), but I’ll post a photo (if possible) of our dish made from the recipe as well as a few bullet-point notes. Recipe: Blueberry Pancakes (but without blueberries) from The Complete America’s Test Kitchen TV Show Cookbook 2001-2013, pages 517-518
- when did we make this? Sunday, January 27, for supper (yes, we have breakfast-for-supper on occasion!)
- did we change anything? used buttermilk (from powder) rather than the milk+lemon juice option. Didn’t add blueberries (didn’t have them on hand)– but this didn’t change the basic pancake recipe.
- what did we like? Truly delicious pancakes. I’m starting to think that I’m going to like every single recipe out of this cookbook!!
- what didn’t we like? N/A
- will we make it again (any changes in the future)? This is probably going to become our go-to pancake recipe. I definitely want to try it with the blueberries, too!












I’m curious… is there something about these that are unique? In my experience, pancakes are pretty much just pancakes… though I put lots of fun stuff in them the basic recipe is always the same.
I’ve cooked a few recipes from various America’s Test Kitchens (or Cooks) cookbooks, and I haven’t been disappointed yet. Sometimes, the recipes are a little involved, but they’re still good.
Kim– There’s nothing earth shattering about the recipe, but that’s kind of the idea behind this ATK cookbook– tweaking “standard” recipes to make them the “best” (at least, according to ATK’s criteria). These pancakes certainly beat the pants off of any recipe (or mix) I’ve made in the past– the best flavor and consistency.
At first, I was put off by all the verbiage in the recipe instructions, but I have had consistently fabulous results with the recipes (we’ve made a number of others, since I checked the book out of the library a few times before just buying it)!
